Soupy Sunday

Chicken Tortilla Soup
Serves 8

Ingredients:
1/3 cup onion
3 cloves garlic
3/4 t cumin
3/4 t oregano
1/4 t chili powder
1/4 t pepper
8 cups chicken broth
1 can tomatoes
1 can green chilies
10 corn tortillas
1.5 lbs chicken
2 T cilantro

In 5-6 quart pot over medium heat, stir onion, garlic, cumin, oregano, chili powder, and pepper until fragrant, about 1 minute. Add broth, tomatoes with juice, and green chilies. Cover and bring to boil. Add tortillas to boiling broth. Reduce heat, cover, simmer 15 minutes. Rinse chicken and cut into 1/2 inch pieces. Add to broth and return to boil. Reduce heat, cover, and simmer until chicken is fully cooked. Stir in cilantro and salt to taste. Garnish with avocado and cheese.
