Mushroom Soup
Serves 8
Ingredients:
2 T olive oil
4 cups sliced mushrooms
1 onion
1 stalk celery
1 carrot
5 cups chicken broth
1/4 cup uncooked rice
3 T soy sauce
pepper to taste
Heat oil and saute mushrooms, onion, celery, and carrot. Add broth, rice, soy sauce. Bring to boil and simmer 20 minutes or until rice is tender. Season with pepper.
